Well if there is a budget issue then it would be best to let your mom cook with the help of others and if you want to hire caterers make it of low budget so that your mom can make few things and the caterers provide other few things.

I could go either way on this one. Things to consider. If it is really needed because of budget issues you do what you have to do. If you have to buy special equipment etc. are you really saving any thing. Does she have catering or restaurant experience. My main concern would be if you don't do this as a job or on a regular basis you may not have the full knowledge and expertise to manage and time every thing to where it can be served hot etc. and keep it a good quality. Consider food safety too. Food not kept at the right temperature can grow enough bacteria to make some one sick in as little as four hours. I have been in the food service business my entire life. When my children get married I will hire some one. I think it would be way too stressful and I want to enjoy my day.
I'd try to convince my mum that i would be happy to see her having fun with me on this special day and not stressing out in the kitchen and then stressing me out because she's stressed out! Ha!
