what is snake/ballet service by caterers? High end stuff?

What little i understand is that it is a synchronized style of service offered by caterers

Would anyone have more details on how such service is organized especially with respect to number of operational service staff

No of persons is 150 seated at 15 ten top tables

I'd like to see if it fits into the wedding plans, budgets and timelines of someone for whom i am planning the logistics of this wedding and i can only make this decision if i have in-depth details
