In my opinion, you still need a wedding planner or, at least, a coordinator for your wedding day to handle everything. Also, you need some wedding planning essentials, like the wedding planner checklist timeline.
True... Would be nice to let them carry ALL the responsibility so I can kick my feet up and enjoy the biggest event of my life.

Most important and convenient thing about a wedding planner is that they have no other commitments than to make sure things happen. They have no other obligations elsewhere. Even if the your sister/MOH is very organized. If she is in the wedding, if your busy taking group pictures with her is she going to be able to notice or see that some thing didn't get delivered, set up on time, saw that those candles got lit your wedding planner will because that's what their there for.
